The Cheval Blanc restaurant in Les Trois Rois Hotel in Basel’s old town has, thanks to chef de cuisine Peter Knogl, been awarded two Michelin stars and 18 Gault Millau points. He is a master of Mediterranean haute cuisine and allows his guests to enjoy a firework of colour, taste explosions and shapes. This is why he was chosen as Chef of the Year 2011. There is a good reason why Peter Knogl called his cookbook “Ma cuisine passionnée”. The wine list includes 700 different wines, including a number from the house of Château de Cheval Blanc, which gave the restaurant its name.
